He presents statistics and debates over evolving livestock and meat production practices globally, food safety, and "green movement" concerns over animal rights and genetically modified organisms. A chapter addresses animal welfare issues particular to developing countries, and a U.S. scientist offers guidelines for animal welfare audit programs.
